Easy Peasy Chicken . . .

I came across this recipe on Pinterest and did not hesitate to pin it! Mel at The Larson Lingo is a genius!! My good friend Kenz beat me to the punch and made this recipe earlier this week and I've been on pins and needles to give it a go myself! Mel described this as "Easiest Dinner Ever" and I could not agree more!


Here's the line up. I forgot to include the Rotel in this picture [my apologies] and I also added mushrooms, which were not part of the original recipe. Let's face it, mushrooms make everything better, right?!


My favorite thing about this recipe, I think, is that there's no cooking. Throw a bag [3lbs] of frozen chicken breasts [or tenders] in your crock pot.


Next throw a block of cream cheese in. I chose to dice up the cream cheese because I wasn't going to be home to stir it every couple of hours - I figured this would help it all break down on its own. Then I poured a bag of taco seasoning on top per the genius of Kenz. It gives it a little kick - so use your own discretion on that.

Drain and rinse a can of beans [the recipe called for black beans...I just grabbed the first beans I saw], corn, and my addition of mushrooms.






Next add all of that to the crock pot.
Then dump in your Rotel - do not drain.

The recipe said 6-8 hours on low. Being the genius that I am, I thought since I didn't start it till my lunch break [11a] I should put it on high while I was home and then switch it to low when I went back to work at noon. That would have been a great idea how I remembered.

Why does my memory always only kick in while I'm going to the bathroom...?! Seriously. I went to use the lady's room at work this afternoon [at about 1:30p] and boom! It dawned on me. I most certainly did not turn the crock pot down to low.

When I got home @ 4p I stirred it up and put it on low. There was a little browning around the edges, but all was well.

Around 5p I took all of the chicken out and shredded it up. I was amazed to see it just fall apart. It was amazing!


Then I added all of the shredded chicken back into the crock pot...


...and stirred. Wow...my mouth started watering. I admit - when I put all of this in at lunch I just didn't see how it was going to get all juicy and delicious like Mel's pictures showed. I figured between the cream cheese and the juice the frozen chicken would give off...it might work. Boy, did it work!! Once I was ready to chow down I cooked up some rice to pour the easiest chicken dinner ever.





The rice soaks up all the yummy extra juice and it just works so well. So delicous.




Look at that!! It's seriously amazing.







Day 22: Kitchen sinkSeeing this makes me realize how dirty the sink is... Yikes!

Made this today! I've made it many times before, super easy and lasts for days!! However, I cheat and use my food chopper. Then sprinkle cilantro and onions on tops. Yummy!!
