Mini Cinni's

Happy New Year everyone!!  I hope 2011 was full of great memories while 2012 holds many new adventures and laughs for us all.  2011 was definitely full of lots of up's and down's (How generic is that?  Everyone says that, right?), but I can't dwell on any of the negatives because it is the year that I married my best friend and soul mate.  We took a great trip south - it was perfect and I couldn't have asked for anything better.  I'm ready to go back, that's for sure!!  I hope the next year answers some of our prayers, but most of all I am just glad that whatever it may hold, I will be side by side with my amazing and supportive husband.


We got together for a game evening with Wes' family today and were just going to have "some snacks."  For Christmas I had made this Crustless Cherry Pie and it was a HUGE hit, so I wanted to make that again.  When we went to Walmart to get the frozen cherries, though, they were out.  So, it became Crustless Red Raspberry Pie.  It was still pretty good, though I prefer the Cherry (the orginial recipe actually calls for Cranberries - ha!).  I also wanted to whip up these Mini Cinnamon Rolls I saw on Iowa Girl Eats' blog a while back.  They looked sooooooo good, quick, and easy - can't beat that!!


Start with crescent rolls - genious, right?!
The roll has 8 triangles in it - so take 4 of them and arrange them as so.

Then pinch all the seams together, flip, and repeat.  The first set I did I went easy on the pinching ... lesson learned: pinch those bad boys!!!!

Using a rolling pin, roll the dough out to 1/4" (just a little bit to get it all one big sheet).  Next, drizzle with 1 Tablespoon of melted butter and top with cinnamon and brown sugar (amounts vary on your desire).

Roll them up.

Cut into 8 pieces.

Put into mini muffin tins.  How cute are they?!
Then repeat with the other 4 triangles of crescent roll dough you have.

Bake according to the crescent roll dough package.

Then I made IGE's Maple Icing.
1 teaspoon maple syrup
1 Tablespoon milk
3/4 Cup powdered sugar

I didn't measure any of that out, but it still turned out pretty good.  Drizzle the frosting on top and let them ooooooze!!

They were a winner - for SURE!!  They disappeared once they arrived and they're just so stinkin' CUTE!!
