Ch-ch-ch-changes. . .

Wow, so I'm not exactly sure where it all came from, but this weekend brought about a determination within me to make some changes!!  For so long now I've talked about how I want need to lose weight, exercise, not hate my body...  I've tried several different approaches at changing what and how I eat, but those fads never last more than a week for me.  This weekend, I decided ... somethings gotta give!

Ok, if we're being honest, I think what did me in was Friday.  Wes & I hate in-home date night.  A while after supper he walked into the living room to find me with a container of frosting in my left hand, butter knife in my right (a butter knife works much better for this than a spoon because . . . ok, this is not the post to be describing the art of eating frosting out of the container - I should be ashamed of myself).  Anyway, this apparently made Wes hungry, as he turned around (yes, he gave me that "hmmm...really?" look) and went back into the kitchen.  As I enter the kitchen I see him slicing a cantaloupe.  I, too, gave him the "hmmm...really?" look, except my disgust stemmed from how bad he was making me look (and FEEL about myself).  I think that was honestly the moment that I realized somethings gotta give!

So, I went to Fareway to stock up:

This was my big brave buy: Baby Spinach and Hummus.
I took off the plastic seal and ran my finger across it to get a feel of what I had gotten myself into with this hummus.  It tasted like Mexican Chip Dip.  The texture, though, leaves something to be desired.  It's a little...grainy; similar to refried beans, I suppose.

Other buys included: mushrooms, milk, eggs (I'm craving some boiled eggs...and they'd also make a great addition to my salads!), and Reduced-Fat Wheat Thins.

At 10 o'clock that night, I decided I wanted to saute some onions to add to my salads (look at me, getting prep done in advance - making it much easier and more likely for me to have a salad).

They didn't quite have the same amazing grilled taste as the restaurants, but I didn't want to use butter and there wasn't any EVOO at my Grandma's (where I was doing this).

For supper Sunday, then, Wes & I had salads.  Here's mine:
Spinach, sauteed onions and mushrooms, a couple broken up homemade tortilla strips, just a lil cheese, and a dash of Lite Italian Dressing.

My verdict:  I didn't spit it out like I did the broccoli.  That's progress, right?!  I actually liked it - I'm going to have to play with dressings, though.  Refrigerating sauteed onions, it turns out, pretty much defeats the purpose of sauteing them.  They still had the taste of being cooked, but they were no long soft(er).  They added a nice crunch to the salad, though, so I guess it all worked out.

Oh, I also scored some whole boneless, skinless chicken breasts at Fareway for like $1.59/lb.  Saweeeet!  So, tonight I need to trim those up, cut them in half, freeze them individually, and then bag up for the freezer.  I think some cooked chicken will be a nice addition to salads too!

Oh, I also got 4 Pink Lady Apples ($1.29/lb or something - holy buckets) and about 8 Fiji/Fuji (...hmmm, which is it?) Apples (a more doable $0.99/lb) and plan on dehydrating them for a snack at work between breakfast and lunch.  Speaking of breakfast, I'm also going to try to quit the PB&J triple deckers (don't knock it till you've tried it).  I've already been trying to balance the week out between those and oatmeal, so now I just need to try to make the mornins mostly oatmeal.

Oh, and since I drank the last can of my beloved Diet Cherry Coke that was in the house this weekend, I've decided we will no longer buy pop for the house.  That is not to say that I am going to quit pop cold turkey...no sirreeeeee!  I will continue to have a pop at work after lunch and for now I think that will be a great improvement.  I'm pretty proud.  I hope I can stick with this.  Diets don't work for me, I just need to add/substitute some healthy alternatives.

Ok, gimme some lovin'!!  I need some encouragement here!!

Thanks, Shannon!

The exercise part is what's hard for me. I have class Monday's & Thursdays from 5:30-8pm in Mtown as well as an online class. They are both very demanding so I honestly don't get much "spare" time to exercise without feeling as though I should be doing class stuff instead.

The other kink that the classes throws in for me is supper. Since I leave home at about 5pm and get home around 8:30pm, I usually end up grabbing a Double Cheeseburger & Small Fry ($2.14) @ McDonald's. It's quick, cheap, but makes me feel so horrible about myself.

After this week I'll be half way done with this term. The next two terms I don't have class till 8pm, which isn't ideal, but will allow me to have "normal" suppers - to cook and eat at a decent time. Then after that only one more term with 2 class and I'll graduate in March. I'm def counting down the days!! (Not only to be done with classes, but to be able to have more time to dedicate to family, Wes, & my health/body!!)

We work out over our lunch. It's literally the only way we will do it. So we go run for 30 min and then eat for the rest of the time, or if we do an hour workout, we'll just eat lunch at our desk. It's too hard to make time after working all day (or having classes at night) and I don't have enough will power to do it on my own.

YAY for almost being done!! SOOOOO exciting!
