Poke Cake . . .

Last week I got a hankerin' for something sweet. It'd been quite a while since I'd had a Poke Cake, and I had all the stuff on hand!



Ingredients:
Cake (prepared)
2 boxes of Jell-O (flavor of choice)
hot water
8 oz Cool Whip


Make cake as directed and let cool.

Don't mind the odd red line through the picture.
While the cake is cooling, prepare 1 box Jell-O with 1 1/2 cup hot water. Let cool.


Once cake is cooled, poke holes in it approximately 1/2 - 1 inch apart.


Pour the cooled Jell-O into the holes of the cake and refrigerate to set.


Mmmmmm! But why stop there?! Let's make frosting!!
Mix the other box of Jell-O with 1 1/2 cup hot water. Refrigerate until starts to gel - then add 8 oz Cool Whip.

Lesson learned: Don't use Fat Free Cool Whip.
Result:


A poor frosting. It was pure liquid. Not ideal. This is what it's NOT supposed to look like. So I refrigerated it overnight in the bowl hoping it'd set up. No luck.


The idea of Jell-O + cake is amazing.


The frosting was a failure, but it still tasted just fine!!!! haha
Sometimes you just have to work with imperfections.

In other news, I'm ridiculously tired. Always. I've been going to bed by 9:30pm and when I wake up at 6:45am I'm still tired. It's ridic. I'm not showing yet - just feel fat/pudgy.

I'm excited for our next pre-natal appointment at the end of the month. I'm enjoying this time of not feeling overly sick yet not being as big as a whale (though I'm anxious for that - I'm sure that happiness will be short lived, though! haha!).

Baby:

ºthe size of a lemon.
ºcan now squint, frown, grimace, pee, and possibly suck his/her thumb!
ºmeasures 3.5 inches and weighs 1.5oz.
