A favorite recipe mixed with a not so successful appetizer . . .

Hola!
So I took Monday off from work so that I could take my accounting test online (which I aced).  Since I was home, I made homemade hamburger and (fresh) mushroom pizza for lupper (late lunch, early supper).  Tuesday, Wes prepared a frozen sausage pizza for me during my lunch break.  Tuesday night I was over helping Kenz and her mom ordered hamburger pizza from Casey's.  So, Wednesday, I thought...why fix something that ain't broken?  I'll make good ol Bubble Pizza for supper!! 

First, I got my hamburger browning with salt, pepper, dried onion flakes, and minced garlic.

While that was cooking, I sliced my mushrooms.



...and then added them to the hamburger once it was browned.


I just wanted them to soften a little bit before going in the oven, so while they did their business, I cut up (literally - with scissors) my biscuits.  Usually, I use those smaller tubes of biscuits that come 4 in a thing (I'm getting de ja vu, like I've typed this out before...hmmm):
...but all I had on hand was:
so we made due and shocked em up!


Then I added a jar of spaghetti sauce (or pizza sauce - whatever you have on hand) and the hamburger/mushroom mixture (this is also where you put whatever toppings: pepperoni, onion, etc.).


Mix that together and add a good amount of cheese, and then put in greased 9x13.


Bake according to biscuit directions and then test by sticking a fork in a biscuit to see if they're done.  It's never the same amount of time, it seems for me.  This time it took about twice as long as directed, but that might be because I used the big flaky biscuits instead of the small buttermilk ones, idk.  Oh yeah, and right before you take it out of the oven, but another handful (or two) of cheese on top and broil.  :)

Ta da!!  Not a fancy pretty dish...but oh so good.  And still amazing left over, let me tell ya!!

While that was in the oven, though, I oddly decided to whip up an appetizer.  I know, right?!  What got into me...?!  Well, I had gotten a couple of squash from the in-laws and wanted to bake it.  Once I slice it in half, though, I saw that it wasn't the right type of squash for that.  This squash didn't have much "meat" to it - it was nearly gone after taking the seeds out.  So, I googled and found a "recipe" for fried squash.

After investigation, and process of elimination, I figured out that this is crookneck squash.


So I peeled and cubed up the squash.


Then I beat 2 eggs (it also called for buttermilk, but I didn't have any) and added S&P.  Also, not pictured, I had two plates of flour.


I coated the cubes in flour, then egg, then flour again.  Then I put them in a pan with hot EVOO in it.


A couple minutes later and we had fried squash.


Verdict: Decent.  I wouldn't make them again - especially as much work as they were and as fat as your fingers get while you're doing the breading - yikes!! haha
