In case you didn't immediately click on the link once I said peanut butter, let me give you the run down on the recipe. Peanut butter cookies. Three ingredients. Heaven, right?!
Alright, so ingredient one: 1 cup marshmallow creme. I didn't have marshmallow creme, but I had marshmallows. I'm not one to run to the store for one ingredient (not that I never have), especially if I have what would seem to be the makings of that ingredient already in the house. I already had marshmallows...so I should be able to "make" marshmallow creme, right?! Well, I looked up recipes for marshmallow creme and was shocked that marshmallows weren't even an ingredient...it's made from corn syrup. Well, so I googled how to make marshmallow creme out of marshmallows and found somewhere that you can substitute 2 cups of mini marshmallows for 7oz of marshmallow creme. Ok, I'll do that!!
Next two ingredients: 1 cup peanut butter & 2 slightly beaten eggs. Mix these two ingredients very well. I couldn't bring myself to take a picture of the egg just sitting in the peanut butter - that kind of creeped me out. So, above is the peanut butter & egg mixed well. I couldn't help but sneak my wonderful wedding present in the background. My lovely friend Brooke got us a bottle of wine with "Jenna & Wes ♥ ♥ July 1, 2011" engraved on it. Love it!! Thanks Brooke!!
So, back to the good ole improvisation (sp?) of marshmallow creme. I put those marshmallows in the microwave for a bit to get them "melted" and stirred the sticky mess.
You were then to stir in the marshmallow "creme" just until combined, so still swirls appear.
Not as easy as it sounds, but here it is. I had to keep reminding myself there was a raw egg in there...because boy did I want to just dip my finger in there!!

I say failure, because they did NOT live up to the beautiful picture which accompanied the recipe I followed. They were not a thick/fluffy as the recipe picture. Where the marshmallow swirls were was just gooey and where there wasn't marshmallow it was just dry peanut butter crumble. Don't get me wrong, they tasted good - I mean, it's peanut butter & marshmallows - you can't go wrong. They just did not live up to the picture. I'm sure my substitution had something to do with it, but who knows.
